Can You Freeze an Avocado?

Avocados were a bargin a few weeks ago. My family really enjoys them.   Could I freeze some?  If so how?

I came home with a box of avocados and several juicy lemons. It was just a matter of finding a knife, wax paper, a cookie sheet and a citrus squeezer.

It was then simply peeling and slicing the avocado into the lemon juice and putting them on to the wax paper. Then into the freezer. I wondered how a half an avocado would freeze. It worked as well as the slices. To keep it from getting dark I was very careful to get the lemon juice all over the halves. They have retained their color very well.

Then we made Guacamole  with some lime juice in it and filled plastic containers. The side of the lid to be placed on the dip itself was dipped into lemon juice just before placing it on the container. The Guacamole is still great!

Now it is easy to reach in the bag of slices and get a few handfuls of avocados to put in the salad.

Would I do it again? Oh YES! It is an easy and inexpensive way to have avocados ready to use and enjoy!
