Mayonnaise: My family’s favorite recipe…

Standard ingredients and tools to make mayonnaise.

Homemade mayonnaise is delicious, yummy and easy to make if you have a blender or even a hand egg beater.

You will need –

2 organic eggs

1 teaspoon Celtic or Brittany salt (a real salt with 88 minerals)

2 cups olive oil  (or other healthy oil)

1/4 cup lemon juice or vinegar

1 teaspoon mustard

Break 2 eggs into blender. Add salt and mustard. With blender running  add the oil VERY SLOWLY especially for the first cupful. Dribble it in. As it finally gets thick add a bit of the lemon/vinegar. When it no longer blends the oil in stop the blender and scrape the sides. You may have to stop several times to get all the oil in.

If about the 4th or 6th time you make mayonnaise it simply won’t thicken and you’ve wasted 2 cups oil…STOP! Pour the mix into a jar and save it.

Crack an egg in the blender and this time pour the jar of oil and vinegar VERY,VERY SLOWLY. We,ve all done it at last once!

We happen to like a combination of half vinegar and half lemon juice. You could also use pickle juice for all or part of it. It is yours to choose the flavors that are most pleasing to you and your family. There are many flavored vinegars too and I often put in a pinch of an herb. If you have whey add 2 tablespoons at the end to give the culture a chance to work and to keep it fresh. If you don’t have any whey don’t worry, it still keeps a month or more in the refrigerator. But, it will be long gone by then!

I often add about 2 tablespoons of cooled melted coconut oil to the mayo near the end. Remember coconut oil is anti bacterial,etc. I have no proof the coconut oil does anything to the mayo except smooth it out.

If you wish, you can add pickle relish to the mayonnaise to make a sandwich spread.

There is always a small amount of mayo in the blender I can,t get out so put in the ingredients for you oil and vinegar/lemon dressing and briefly mix.
